The Coffee Recipe You'll Get Up Early to Make: Creamy Keto Coffee

“I’m sorry…get up early? or earlier, really?” is generally my reaction when people (possibly my husband) suggest that I get up earlier for something. I’m already up early, anyways, with the kids. I’ve never been an early morning person. I’ve had jobs that required me to get up QUITE early. That was painful. I realize most people have jobs that require them to get up early. I applaud them, I do. Those are my general feelings about “early.”

Why we started drinking Coffee differently

A few years ago my husband and I knew we needed to take action to improve our health. We needed to make healthier choices, exercise more, and really evaluate what worked best for us to be able to achieve our health goals. After quite a bit of research and consulting many physicians, we decided that the Ketogenic Diet might be a good starting point for us. I’m not a fan of the word ‘diet.’ I just wanted to be healthy and create a healthier lifestyle. We read some recommended literature on this and gave it a shot. As we evaluated what we needed to change (routines, recipes, etc.), I thought about how my day would start and how long my energy from breakfast would last. I don’t know about you guys, but I start my day with coffee. That was really one of my main questions: “But what about my morning coffee?” followed by, “What do you mean I can’t have coffee creamer?” and then, “What do you mean coffee creamer has unhealthy ingredients in it?” Clearly I had my priorities in order. I was forced to re-examine this beloved morning ritual. Because this diet is a high fat diet (think good fats - fish, nuts, avocados, etc. - not double bacon cheeseburgers and loaded cheese fries), something called ‘bulletproof coffee’ fit in nicely. Yep, that’s right. Bulletproof. I wish it had some super hero correlations, but sadly, it doesn’t (although, these days, with two little kids, mental clarity is a super power for me any day of the week). You may have heard this before because it’s been around for a while and has become increasingly popular. I just hadn’t tried it yet because the recipe calls for putting butter in your coffee. Yes, butter. Now, I’m a southern girl, for sure. And I like butter. But I wasn’t prepared for butter to occupy the same cup as my coffee. So I dragged my feet and kept using my regular old coffee creamer. But times, they were changing in our house. So I tried it. We always tell our kids at each meal that they have to try everything once, so I had to put my money where my mouth was (kind of like yesterday when I was forced to try applesauce on deli meat…). For a cup of bulletproof coffee, you add grass-fed butter and coconut oil. The best way to do this, however, is not just plopping some butter and coconut oil into your travel mug before you rush out the door. I will share the best way to do this with you! Also, the benefits of drinking a cup of coffee with these odd-sounding ingredients have been great, in my experience. The RecIpe

Finally! The recipe (there’s a cute recipe card below for you to download)! You can tweak these to your desired degrees of yumminess. Over time I have added less or more of some of them depending on what I wanted that morning or how much coffee is in my cup…or left in the pot…to needs to be reheated. If you are not a person who has tried or is trying the Ketogenic Diet, then I highly recommend looking at the nutrition facts when making this. The caloric and fat content is rather high for a non-keto diet.

You need the following:

1 cup of coffee (for me this might be a large mug or my travel mug for work and I adjust ratios as needed)

2 tablespoons of grass-fed butter (we have used Kerrygold butter for the last two years and love it - you should be able to find this at your grocery store)

1-2 tablespoons of cold pressed, unrefined coconut oil (this matters to me for several reasons, one of which being the process that refined goes through and ultimately there being no coconut flavor left)

2-4 tablespoons of heavy whipping cream (this really depends on your creaminess preference)

1 blender or immersion blender - initially we used a regular blender, which added to cleanup time. I tried to make it without using a blender and it completely defeats the purpose. No amount of spoon stirring will create this heavenly combo, sadly. Then my husband had this great idea to get an immersion blender. I’d never had one before and this baby is a game changer! This is the one we got about a year ago. We haven't had any problems and it is very easy to clean.

Optional - flavor or sweetener - I drank this for quite a long time without adding any sweetener or flavor. It was a nice way to rid my body’s “need” for sweet coffee in the morning. I was also able to taste the different ingredients and really enjoy it naturally. At a conference one weekend, when all of these wonderful ingredients weren’t available and I had to settle for creamer, I took one sip and couldn’t stomach it. It tasted way too sweet and definitely artificial. Drinking this “as is” was a nice break from sweet things. When we decided to add something in at home to give it a little flavor we used a little bit of vanilla extract, sometimes Splenda, or Torani Sugar Free Coffee Syrup. The salted caramel is my favorite!

Combine the ingredients in a microwave-safe mug and heat for 30-45 seconds in increments of 15 seconds or until all ingredients are liquified. They will not incorporate well if they aren’t all liquid. Transfer the combined liquids to a stainless steel pitcher. We have used this one for a while now. We tried to blend the ingredients in our coffee mugs but it just wasn’t enough room and ended up making a mess (I’m good with no additional messes in the morning while trying to help put shoes on and get backpacks in the car…). Our pitcher is wide and deep enough for the immersion blender to do its job without spilling anything.

Blend ingredients using your immersion blender (or regular blender if you don’t have one) until they’re frothy. Pour yourself a cup of coffee in your favorite mug and pour in the creamy, frothy mixture. Stir to combine all ingredients. Stir in your sweetener if you like. Gaze. Sip. Enjoy.

For me, this is a sensory-rich experience! It looks pretty, smells amazing, is warm, and tastes scrumptious. I look forward to it every morning, and yes, I get up earlier for it. It really only takes a few extra minutes and is absolutely worth it.

Sometimes in the morning, this might be all we drink if we are rushing and don’t have time for breakfast. Usually I have an egg and drink this in my travel mug over the course of two hours (yes, it actually stays hot and is like a long-lasting morning snack, which keeps me satisfied and energized until lunch).
